With health experts urging people to eat more plant-based meals and balance festive indulgence, 5+ A Day Charitable Trust suggested pairing colourful salads with traditional Christmas fare.

To support this shift, 5+ A Day, in partnership with Vegetables NZ and Tomatoes NZ, is encouraging families to celebrate the season with locally grown, seasonal vegetables that bring both vibrancy and vitality to the table.

“We’re seeing a growing movement toward lighter, fresher festive menus,” said Dr Carolyn Lister, spokesperson for the 5+ A Day Charitable Trust.

“Christmas doesn’t need to be all about ham, pudding and feeling overly full. Salads made with in-season New Zealand produce can be just as festive, and they help support good health, energy, and balance.”

This summer’s stars include beetroot, capsicum, cucumber, herbs, leafy greens, sweetcorn, and tomatoes, all at their seasonal best. With food inflation still at the forefront of people’s minds, choosing seasonal vegetables isn’t just good for your body; it’s smart for your pocket and a sustainable way to support Kiwi growers.

“While we encourage everyone to aim for five or more servings of vegetables each day, adding just one more serving of vegetables each day can make a real difference to how you feel,” said Dr Lister.

“We want to inspire people to make vegetables the hero dish this Christmas.”

5+ A Day has created four vibrant, easy-to-prepare recipes that elevate the humble salad to celebration status this Christmas:

  • Cherry Caprese Salad – A festive twist on the classic Italian salad, combining juicy New Zealand cherries with creamy mozzarella and fresh basil for a colourful Christmas plate.
  • Capsicum Salad with Burrata Cheese – Sweet, roasted capsicums pair beautifully with creamy burrata, olive oil, and herbs for a rich yet refreshing summer side.
  • Radish & Pomegranate Christmas Salad – Crisp radishes, vibrant pomegranate seeds, and greens create a bright, tangy salad perfect for your festive table.
