Sip on Summer: 5 Must-Try Drinks for those Hot Days (and Nights)

Need to cool down this summer? Try your hand at crafting these refreshing summer drinks and impress your friends with your mixology skills.

All these recipes are alcohol-free (great for those needing to step away from the booze after New Year’s), but don’t get it twisted, each of these recipes can easily become a cocktail by adding your spirit of choice.

Peach Fizz


2 Peaches (stoned and finely chopped, plus an extra thinly sliced piece for garnishing)

1/3 cup of lime juice

¼ cup of caster sugar

1.25L chilled sparkling water (lemon or lime flavoured will give it that extra kick)

Crushed ice

Raspberries and Mint leaves to serve

(add gin to make it alcoholic)


Combine chopped peach, lime juice and sugar in a saucepan over low heat. Cook, stirring occasionally, for 5-7 mins or until peach is very tender. Remove from heat. Transfer to a blender. Blend until smooth. Place in the fridge to chill.

Divide extra peach and raspberries among serving glasses. Combine peach puree (and gin, if using) in a jug. Pour evenly among the glasses. Top with ice, sparkling water, and mint. (If not using gin, add extra water).

Green Apple Mock-Margarita


Salt to serve

1 lime, halved

3 cups sparkling apple juice

2 tsp finely grated lime rind

2 tbsp lime juice

4 cups ice cubes

4 slices green apple

Lime zest to serve

(take away 1 cup of sparkling apple juice and swap for 250ml tequila to make it alcoholic)


Place salt on a plate. Run the cut side of the lime around the rims of serving glasses. Dip in the salt to coat.

Place sparkling apple juice, (tequila, if using), lime rind, lime juice and ice in a blender and blend until smooth. Pour evenly among the glasses.

Pink Grapefruit Punch


Pomegranate Seeds to serve

4 cups chilled lemonade

2 cups ruby red grapefruit juice

½ cup lime juice

¾ cup of orange and mango juice (or flavoured sparkling water)

(swap orange and mango for 125ml Tequila and 60ml Cointreau to make it alcoholic)


Place pomegranate seeds in an ice-cube tray. Cover with water. Place in the freezer for 2 hours or until frozen.

Combine the lemonade, grapefruit juice, lime juice, orange and mango juice (or tequila and Cointreau) in a serving jug. Top with pomegranate ice cubes. Divide among serving glasses and serve immediately.

Watermelon Cooler


2 cups finely chopped watermelon

250g strawberries thinly sliced

1 cup chilled coconut water

1 tbsp fresh basil, shredded

Ice cubes to serve

Basil leaves to serve

(add 750ml chilled sparkling wine to make it alcoholic)


Process the watermelon and strawberry in a food processor until smooth. Add the coconut water and shredded basil and process until well combined.

Place the watermelon mixture in a serving jug top up with (sparkling wine) and ice cubes. Serve with the basil leaves.

Summer Party Punch


1 star anise

½ cup caster sugar

1/3 cup water

2 cups pineapple juice

1 cup chilled sparkling water

125g raspberries

120g blueberries

100g seedless green grapes halved

1 mango peeled and sliced

2 kiwifruit peeled and cut into wedges

1 small red apple sliced

½ fresh mint

Ice cubes and lemon slices to serve

(add a spirit of your choice to make it alcoholic, we recommend vodka, or to make it like a sangria, add white or rosé wine)


Place star anise, 1/3 cup sugar and 1/3 cup water in a small saucepan. Stir over medium heat for 2 minutes or until sugar dissolves. Remove from heat. Place in a large bowl. Stir in pineapple juice and mineral water.

Place fruit, half the mint and ice in a large jug. Top with juice mixture (and alcohol if using). Serve punch with lemon slices and top with remaining mint.
