Hollandaise is most commonly found on eggs Benedict, poached fish, or asparagus. Béarnaise is similar to hollandaise but utilises white wine vinegar instead of lemon. It is also flavoured with shallots and tarragon. Béarnaise is usually served with steaks or grilled meats.
