Celebrity Baker Spills Cupcake Secrets

Celebrity baker Gabriela Oporto, owner of Sydney-based Bakealicious by Gabriela, has shared her secret tips and tricks for baking fluffy cupcakes at home.

First and foremost, don’t rush the mixing process. Let the butter and sugar mix until the colour changes to a light and creamy shade. Then, add eggs one at a time, slowly and steadily, to ensure the perfect consistency.

But be careful to do it only after you add the flour, or you’ll end up with a dense and heavy texture. Lastly, don’t let the batter rest. Bake it straight away!

Gabriella’s Famous Vanilla Cupcake Recipe

Vanilla Cupcakes

Ingredients:

2 cups Caster Sugar
115g Butter, unsalted
4 Eggs
2 cups Self-Raising Flour, sifted
1 cup Milk

Method:

  1. Place butter and sugar in a bowl and mix with a paddle attachment until light and fluffy. Slowly add eggs, one at a time, mixing until well combined and the colour has become lighter.
  2. Mix half the sifted flour on low speed, then alternate with half of the milk. Repeat with the remaining flour and milk. Do not overmix the batter at this stage. Once it is all combined and without any lumps, it’s ready.
  3. Line a cupcake tray with cupcake holders and place the batter using a spoon until three-quarters of the way.
  4. Bake at 180°C/160°C fan forced for 15 to 20 minutes. To check if they are ready, insert a skewer in the centre. It must come out clean.
  5. Put them aside so they can cool down.
Buttercream Icing

Ingredients
250g Butter, unsalted
4 cups Icing Sugar, sifted
1 tbsp Vanilla Extract
4 tbsp Milk or Cream

Method:

  1. Place butter in a bowl and mix with a handheld mixer until light and creamy. I recommend a paddle attachment for stand mixers.
  2. Slowly add icing sugar and mix until the sugar has dissolved. You can test this by putting some between your fingers. If you still feel it is grainy, continue mixing.
  3. And lastly, add vanilla extract and milk. Mix until all combined.
